Fumaric acid is also known as fumaric acid and fumaric acid. It is found in fumaric acid, mushrooms, and fresh beef in nature. What precipitates out of water is monoclinic acicular, prismatic or leaf-like white crystals or crystalline powder. Odorless, with special sour taste, strong sourness, about 1.5 times that of citric acid. The melting point is 287°C, the boiling point is 290°C, and it sublimates at 200°C. When heated to 230°C, it loses water to form maleic anhydride, which is boiled with water to form DL-malic acid. It is soluble in ethanol, slightly soluble in water and ether, and hardly soluble in chloroform.
